Cheesy Tomato Turkey Bake

Ingredients:

  • 6 oz (180 g) elbow macaroni
  • 2 cups (500 mL) prepared tomato sauce
  • 2/3 cup (150 mL) onion, diced
  • 2 Tbsp (30 mL) dried oregano
  • 2 cloves fresh garlic, finely chopped
  • 3 cups (750 mL) diced cooked turkey
  • 2 cups (500 mL) light ricotta cheese, 2 Tbsp (30 mL) reserved for topping
  • ¼ cup (60 mL) grated parmesan cheese
  • ½ cup (125 mL) grated fat-reduced mozzarella cheese

Directions:

  1. Cook macaroni according to package directions; drain and set aside.
  2. Meanwhile in a large bowl mix together tomato sauce, onion, oregano and garlic. Stir in drained noodles and turkey.
  3. In a 2 quart (2.5 L) casserole dish, spoon noodle mixture into the bottom.
  4. Mix ricotta cheese and parmesan together and spread on top of noodle mixture; top with remaining noodle mixture. Sprinkle mozzarella cheese evenly on top, then crumble the reserved ricotta on top.
  5. Bake at 350°F (180°C) for 20 minutes or until bubbling and ricotta is golden brown.
