Tzatziki Turkey Cucumber & Cream Cheese Sandwich


  • 2 lbs (1 kg) boneless/skinless turkey thighs, cut into bite-sized pieces
  • ½ cup (125 mL) tzatziki
  • ½ cup (125 mL) buttermilk
  • ½ tsp (2.5 mL) sea salt
  • ¼ tsp (1 mL) fresh ground pepper
  • 1 English cucumber, sliced thinly
  • ½ cup (125 mL) cream cheese
  • 1 loaf of rye bread


  1. In a re-sealable container or bag, add the sliced thighs, buttermilk, tzatziki, salt and pepper. Let marinade for 1 hour, up to overnight.
  2. Preheat oven to 350oF (175oC). Place marinated thighs on a parchment- or foil-lined baking sheet and cook for 20-25 minutes or until internal temperature reaches 165oF (74oC).
  3. Remove and let cool slightly. At this point, you can use the turkey right away or place in a container in the fridge for use throughout the week.
  4. To build you sandwich: slather one side of your bread with a good amount of cream cheese and top with sliced cucumber and tzatziki turkey. Place second slice of bread on top and enjoy!
